Ok we all know that header tags hold some weight, but if I add CSS into the mix does it confuse spiders?
For example....
<h1 class="shead">Sub Header</h1>

That's a really good question. My instinct tells me that the more complicated the coding the more flags raised by googlebot.
the bots like to when things are kept simple in my experience.
Still, I'm going to look into this.
Very interesting...

As for my experience it's better to make separate H1 class in CSS, but class in H1 also works ;)

As with most on-page optimization. Your best bet is to experiment. Try making a seperate H1 class, etc...then remove it, etc...
Either way on-page optimization techniques such as there only account for a small fraction of your SERPs.
I prefer to work on acquiring backlinks more than tweaking on-page optimization.
However, it's an interesting topic that you have uncovered for us. I'll try to play around with the H1 stuff, and let you know what my results are.

On page optimization also means a lot, of course in less competitive areas or in areas when competition is very high. ;)
