Hy,
I'm having a question for all of you: how much money would you ask if someone would want a site listed in Top10 for the keyword "hotel" ?
Would you accept such a job?

I would definitely NOT accept that job. There are two major problems that come to mind immediately:
1)The term is way too competitive. It might literally take years of extremely high level SEO to rank in the top 10 (especially in Google) for that term.
2)The term is way too generic to be of any real use.
It is your job to educate your client about these issues and guide to a more realistic and more useful set of target search terms.
For example, you may want to suggest that they target regional terms like
"Hotel in Jamaica"
"New York Hotel"
etc.....
Instead of targeting an ultra generic term like "hotel" have them select a handful of more target terms that include the word "hotel".

You're right saying that I should advise my client to target more specific keywords. I have already proposed him a list with specific keywords (like the above examples)... but it seems that the client wants to keep with his list of keywords. So I thought that the high price for this job will scare him... ;)
So...tell me, in case you would accept this job... how much would you ask for?
200 000 euro? ... something like that?

I always say that an uneducated SEO client will be an unhappy SEO client.
Chances are that if he does not understand the reasons why he shouldn't target the term "Hotel" he won't understand later on down the line why it's taking so long to rank for that term (especially in Google).
You will gain a lot of trust points if you refuse to quote him on optimization for that term, and instead, insist on targeting more feasible terms.
Quoting him a huge number won't do anything for you IMO.
Either he'll get scared off and look elsewhere, or he will accept the quote pay you, then scream bloody murder when all that money hasn't paid off (in terms of top 10 rankings for that term).
